The pectinase inhibitor from sericea (Lespedeza cuneata)

A pectinase inhibitor extracted from sericea (Lespedeza cuneata Don) could be purified by countercurrent distribution in an isopropyl alcohol-water-sodium chloride system or by dialysis. Purified material was less stable than cruder preparations. Although it could not be obtained as a single molecular entity, the inhibitor was shown to consist of polymeric pro-anthocyanidins based on a leucodelphinidin unit. Degradation of the inhibitor to delphinidin chloride by heating with hydrochloric acid in 2-propanol was shown to be influenced by the presence of oxygen, iron (III) chloride, benzoquinone, and radical sources.
